I remember once keeping a journal on a trip to Minnesota because my Dear Grandma was unable to go with us that year.
Travel at night. Give the child a very nice warm dinner, put on the pjs and a sweater, then start on your trip. Cuddle the child all round w/ a favorite pillow, blanket and toy. Chances are the child will sleep most of the way so s/he will not be hungry, feisty or need to go to the bathroom. It worked for us. Then in the morning we had a really lovely breakfast along the way.
When child is awake: sing, read stories aloud, provide paper to draw, sketch scenes, make notes, watch for white cows with black spots, watch for 'Jack In The Box' heads on aerials, watch for old and new VW Beetles, tell riddles.

They're trying to get away from the noise.
Play games. Tic Tac Toe is always a good one. I used to make Traveling Tic Tac Toe boards when I was in the toy business.
